Ingredients

  • 3 lbs. boneless skinless chicken breasts
  • 3 cups oil

Marinade

  • 1 cup buttermilk
  • ¼ cup pickle juice
  • 2 teaspoons salt
  • 2 eggs

Batter

  • 2 cups flour
  • 2 teaspoons salt
  • ½ teaspoon garlic
  • ½ teaspoon paprika
  • ¼ teaspoon pepper
  • teaspoon cayenne

Nashville Hot Sauce

  • ½ cup butter
  • ½ teaspoon - 2 T. cayenne
  • 2 teaspoons brown sugar
  • ½ teaspoon paprika
  • ½ teaspoon garlic

Instructions

  1. Cut each chicken breast into 3-4 strips.

  2. Whisk the eggs into the rest of the marinade ingredients and put the chicken in the marinade for at least 30 minutes.

  3. Combine batter ingredients in a flat dish.

  4. Heat the oil in a deep pot to 350 degrees or until a tiny drop of water sputters.

  5. Carefully take 2-3 pieces of chicken out of the marinade and coat completely in the batter ingredients.

  6. Place carefully in the oil and fry 2-3 minutes on each side until golden brown.

  7. Drain and cool on a wire rack with paper towels underneath.

  8. Heat the butter in a small saucepan along with the other sauce ingredients, until melted.

  9. Brush the chicken tenders with the hot sauce and enjoy!
